Day 18

Have you ever put pistachios on salmon? You should try. I frequently put almonds on my fish but I love pistachios so I thought I'd give that a try. I put some avocado mayo on my salmon filet, then crushed some pistachios and sprinkled them on top. Salt, pepper, and umami mushroom seasoning from Trader Joe's, and a dollop of ghee finished it off. I baked it at 450 for 15 minutes and that fish came out so beautifully golden and sizzling! It tasted as good as it looked, too. I've got a new item in my rotation! My husband requested that the shepherds pie be put in rotation, also.


In other news, I'm officially going to have a booth at Lampasas' Artober Fest. I wasn't sure for a while because I didn't know who could watch my daughter. My mother is available so I can attend. My yarn will be at a trunk show at You're So Crafty in Seguin for the Hill Country Yarn Crawl, but I will be selling my granny shawls, spinning yarn, and signing people up for classes. Festivals are my absolute favorite thing to do so I'm excited that I get to kick off my festival season close to home. My goal is to get into renaissance festivals, but I need a lot of money for booth rental, so that's a long term goal I'm working towards. Renaissance festivals usually last for a month or longer, so being involved in one would involve a lot of planning on my part, but it's something I really want so I will find a way to make it happen.


Anyway, I need to get ready for my pumpkin class today, so I'll keep it short.
